In this cleverly designed barbecue/grill the food is heated by infra-red radiated from a stainless steel plate above the burners. This means fat from the food is deflected away from the flames (collecting in a slide-out tray beneath), so you won't get dangerous flare-ups and are much less likely to turn everything into charcoal!
